
Chipotle
As we begin to take shelter from the coming cold season, we asked for dishes that will warm us all the way down to your toes. Of course my family is not the only ones with cold extremities. I have received four applications for crockpot recipes in the past week. Even his muscles once again play on the successful slow cooking of our family Crockpot Applesauce was my crockpot for the challenge. The inspiration for this recipe came from Sunset Magazine Fat Cookbook, but I took some liberties with the recipe, add tomatoes and black beans, and increasing the wort. The result was a tasty, nutritious soup that was not over when Browning chopping some vegetables and some chicken. Mission accomplished.
In a large crockpot, I combine onion, carrots, chipotle, pepper, and garlic along with oregano and black beans. To add additional flavor to chicken thighs in a pan 2 minutes per side, embedded in the crockpot before the brown. The last step is to chicken broth, water, and add canned tomatoes. Just turn the crockpot and let their magic.
During the last half hour of cooking, add the rice mixture to the soup. The last step is to remove remove chicken from bones, is stirred back into the soup, and threw a handful of chopped coriander. Brighten up the soup with a dash of lime and you have a filling meal that requires little effort.
